Spicy Beef Curry Stew

My cooking hit a snag recently and I am just glad to have people around me to keep sending inspirations down my way. Yes, Lyn a pizza might just be coming this way. (^.^)

I have sworn off Allrecipes.com for as long as I have decided to go Asian, but somehow I still find myself wondering at times if there are some interesting recipes in there just for a change of palette. And true enough, I found this recipe which with just the title makes me drool. I've tuned up the heat with bird's eye chilli and it was a hit with Hubby. My only 2 complains with this recipe were that it was expensive (S$20+ for the beef alone) and the browning was an extremely treacherous task.



My slow cook pot has been sitting sadly on my countertop beside the stove. Putting up with all the oil splatters of my daily cooking but it still waited patiently for its chance to return to glory. And once again, it proved to be a real trusty fellow and that it is earned the right to remain on my countertop permanently (despite a few betraying thoughts from me about banishing it to the cupboard!). I think I would be trying out a few more slow cook recipes but not from Allrecipes.com cos most of the recipes simply have too much usage of canned soups for my liking.

p.s.: Please ignore the green beans and the carrots, they are just leftovers added after I made a batch of pork belly rolls. (^.^)

Spicy Beef Curry Stew for the Slow Cooker
*******************************************
1 tbsp cooking oil
700g beef shin - cut into bite size
salt and pepper to taste
2 cloves of garlic - minced
1 tbsp ginger - minced
8 bird's eye chilli - minced
1 heapful tbsp curry power
1 (14.5oz) can diced tomatoes with juice
1 large onion - sliced
1 cup water
1 beef cube

1. Heat the oil in a skillet over medium heat, and brown the beef on all sides. Remove from skillet, reserving juices, and season with salt and pepper. Cook and stir the garlic, ginger, and bird's eye chilli in the skillet for 2 minutes, until tender, and season with curry powder. Mix in the diced tomatoes and juice.
2. Place the onion in the bottom of a slow cooker, and layer with the browned beef. Scoop the skillet mixture into the slow cooker, and mix in water and beef cube.
3. Cover and cook 2hrs on High and 1 hr on Low.
