Breaded Chicken Cutlets


Still flipping through my Joy of Cooking, we made these cutlets last night. I have tried making Martha Stewart's version before but it didn't quite make the mark. Joy's breaded crust is wonderfully crispy and easy to make.

As I had bought more chicken breasts than called for, when I ran out of breadcrumbs, I merely dusted the chicken with seasoned flour and pan fried them. They looked kinda bare, don't you think?

  1. yummy yummy. i love this rene! in fact, i love anything chix breast/fillet. i think the texture of the meat takes in more seasoning than other parts of the chicken.

    it seems like there are quite alot of complaints that martha stewart's recipes arent good. mayb i shd stop buying the mag :(

  2. Yeah, I prefer chicken breast to any other parts. So far for me, the only recipe of Martha Stewart that didn't work well was this Breaded Chicken Cutlets of hers. Her MSL and Food magazines are so expensive here!
